Blueberry Lemon Blondies Blondies: 1 cup all-purpo Blueberry Lemon Blondies
Blondies:
1 cup all-purpose flour
¼ teaspoon baking powder
¼ teaspoon salt
½ cup butter-room temperature
¾ cup sugar
Grated zest from 1 lemon
1 large egg-room temperature
¼ cup freshly squeezed lemon juice
1 cup fresh blueberries
Glaze:
1 cup powdered sugar-sifted
2 Tablespoon lemon juice
1 heaping Tablespoon frozen blueberries

Instructions:
1. Preheat the oven to 350 F, line 8×8 inch baking dish with parchment paper, leaving a large overhang the sides so you can easily lift the blondes from the pan.
2. In a separate bowl, stir together flour, baking powder and salt, set aside.
3. Beat softened butter, sugar and lemon zest for 2 minutes. Add egg and mix to combine.
4. Next, add lemon juice and mix to combine. It won’t come together completely, but that’s OK.
5. Add flour mixture and mix until all combined well.
6. Finally, using a rubber spatula, gently fold in blueberries.
7. Spread the mixture in the prepared dish and bake 25-30 minutes, or until it’s lightly golden brown on the edges and the center has set completely.
8. Cool to a room temperature.
9. To make the glaze, in a food processor, pulse lemon juice and frozen blueberries (use frozen blueberries to get intense purple color). Strain the juice. Stir powdered sugar and 1 Tablespoon of the juice. Add more juice if needed. The glaze should be spreadable but not too runny. If it’s too thin add more powdered sugar, and if it’s too thick add more juice until reach desired consistency.
10. Spread over blondies and let harden, about 10 minutes, before serving.

Back this week for lunch is the Italian Beef Sandw Back this week for lunch is the Italian Beef Sandwich! 😋  Slow-roasted roast beef, seasoned with garlic, oregano, and other spices, on a toasted hoagie roll, and topped with Giardiniera (an Italian relish of pickled peppers, celery, carrots, and cauliflower in soybean oil).

Sausage and Apple Stuffed Acorn Squash 

INGREDIENTS for 4 servings
2 small acorn squashes, or 1 large
1 onion, chopped
2 stalks celery, chopped
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon pepper
1 teaspoon fresh rosemary
3 cloves garlic, chopped
½ lb sausage
1 apple, chopped
1 cup panko breadcrumbs
½ cup parmesan cheese

PREPARATION 
Using a sharp knife cut off the very top and bottom of each squash to create a flat base on each side (being careful not to cut through the center cavity).
Slice the squash in half, scrape out seeds to create individual bowls for the stuffing.
Drizzle each squash half with olive oil, salt, and pepper.
Roast in a preheated oven at 400˚F (200˚C) for 40-50 minutes - or until fork tender.
While squash is roasting - in a large fry pan over medium heat - heat oil and add Onion, Celery, Salt, Pepper, and Rosemary. Cook until onions begin to soften.
Add Garlic and Sausage, until sausage is browned on all sides.
Add Apple until slightly softened. Finally mix in Bread Crumbs and Parmesan cheese just until incorporated. Remove from heat.
Once Squash has finished roasting (when you can easily poke it with a fork) remove from oven and fill each with prepared stuffing mixture.
Return to Oven for 20 minutes - adding a sprinkle of Parmesan cheese to the top for the final 5 minutes.
